- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably seasoned)
- Salt and pepper to taste
- 1 teaspoon garlic powder (optional)
- Olive oil or vegetable oil for frying

Instructions:
1.Prepare the Chicken:Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness (about ½ inch).
2.Set Up Breading Stations:In three shallow bowls, set up your stations: one with flour mixed with salt, pepper, and garlic powder; one with beaten eggs; and one with breadcrumbs.
3.Coat the Chicken:Dredge each chicken breast in flour, shaking off excess. Dip into beaten eggs, then coat thoroughly with breadcrumbs.
4.Heat Oil:In a large skillet, heat about ¼ inch of oil over medium heat until hot.
5.Fry the Cutlets:Carefully place the breaded chicken cutlets in the skillet, cooking for about 4-5 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F).
6.Drain & Serve:Remove from the skillet and drain on paper towels. Serve hot with lemon wedges if desired. Enjoy!
